Chicken Tikka Masala

I miss Asian and Indian food. Land O'Lakes delivery meals provide very limited options—occasional sushi and Thai meals, usually overpriced and often predictably geared to the American palate—or the usual chain restaurant offerings. Not my cup of tea.

Now I am not an experienced Indian cook. Far from it, but that's no reason to shy away from attempting to bring more exotic flavors into our daily (Covid/humdrum) lives, so Chicken Tikka Masala made it to this week's menu.

While rehabbing my knee I wiled away painful moments discussing Indian recipes and techniques with a wonderful PT tech named Shikha who cautioned me about packaged garam masala. "Too much cinnamon," she said. Mindful of her words I made my own mixture, although I have to admit I added a little more cinnamon than recommended. I kept the fire power in check for Jerry's sake, followed her rice recipe and grilled up a couple pieces of naan with my inexhaustible supply of prepared bread dough.

Jerry gobbled it up. Guess it was good.
